This is our Head Cheese w/ Crispy Ear Salad and served with our grilled country bread. It has a great ratio of meat vs. gelatin which I love. Gavin hit a home run. We are all very happy how it turned out. We were given lemons and we made some great lemonade. It is extremely rewarding transforming cuts of meat no one would use and turning it into something glorious and special. That is what cooking is all about.
